Ingredients: 3 Chicken Breasts, butterflied (yield 6 pieces) ~ 2 Cups Flour ~ ½ Tsp Salt ¼ Tsp Pepper ~ 3 Eggs, beaten ~ ½ Cup Water, add to egg ~ 3 Cups Italian Seasoned Bread crumbs ~ ½ Cup Grated Parmigiana Cheese ~ 3 Cups Shredded Mozzarella Cheese ~ 1 Quart (32 ounce) DeMassimo’s Pasta Sauce
Preparation: Butterfly Chicken Breasts, so that each full breast yields 2 slices of chicken. Place the flour with salt and pepper in one dish, egg wash in another and Italian bread crumbs with Parmigiana cheese in the third dish. Coat the chicken in flour, then the egg wash and lastly the bread crumbs.
Cooking Instructions: Preheat oven to 350 degrees. In a large skillet, heat the oil over medium heat. Place the breaded chicken in hot oil until lightly browned on each side. Remove chicken from skillet and place on a sheet tray. Spread sauce on the chicken and top with Mozzarella cheese. Bake at 350 degrees for about 10-12 minutes, until cheese is melted.
