Hearty Chili
Ingredients:  1 clove chopped garlic ~ 1 small onion chopped ~ 1 pound of ground sirloin ~ 1 cup mushrooms ~ 1 cup green pepper ~ 1 cup red pepper ~ 1 cup chili beans in sauce ~ 1 cup cannellini  beans ~1 cup diced tomatoes ~ 1 cup roasted tomatoes ~ 1 cup chili sauce ~ 16 – 20 ounces of DeMassimos Arrabiata sauce

 Preparation: In a warm pan with oil, sauté garlic and onions until translucent. Add ground sirloin and brown for about 6-8 minutes before adding vegetables.  Start with vegetables that take the longest to cook such as mushrooms and peppers. As the first group of vegetables is beginning to cook down, incorporate beans and tomatoes and let cook. Finally add in chili and Arrabiata sauce. Simmer for 30-45 minutes until liquid reduces and chili thickens.


Easy Cheesy Mac

½ pound cooked bowtie pasta ~ 2/3 cup milk ~ 12 oz of an easy melting cheese loaf, cubed In a microwave safe bowl combine cubed cheese loaf with milk. Cook on high for 2 minutes and stir. Continue process until well combined. Mix pasta into cheese sauce.  Top with chili.


Goat Cheese & Arribbiata Dip with Crostini

Ingredients:  4 Oz Herbed Goat Cheese  ~  4 Oz Pain Goat Cheese  ~  16 Oz   DeMassimo’s Arribbiatta Sauce or your favorite spicy tomato sauce  ~  One Baguette  ~  Olive Oil or Butter  ~  Salt and Pepper

Preparation Instructions:  Heat pan to medium and combine goat cheese and arrabbiatta sauce in the pan. While the sauce and cheese are combining, slice a baguette diagonally (on the bias).  Place the bread slices on a parchment lined baking sheet.  Brush with olive oil or melted butter. Sprinkle with salt and pepper. Place in the oven for 5-7 minutes, or until crisp at 350 degrees.  The dip is ready to serve when the cheese is melted and well blended into the sauce. Pour into a severing bowl and place crostini on a tray or platter.


Savory Mushroom Cups

Ingredients:  1 Lb  Mushrooms Chopped  ~  6 TBS Butter  ~  ¼ Cup Minced Shallots  ~  ¼ Cup Grated Parmesan Cheese 8 Oz  Whipped Cream Cheese  ~  30 Prepared Filo Shells (defrosted) ~  Salt and Pepper   

Preparation Instructions:  Heat pan to medium and melt butter. Add minced shallots and allow them to sweat for about 3 minutes. Then add mushrooms and let reduce for approximately 15-20 minutes or until thickened.  Season with salt and pepper.  While the mushrooms are reducing, whip with a hand mixer the cream cheese.  Combine whipped cream cheese and grated parmesan cheese into the mixture.  Stir until cream cheese is melted and all ingredients are well blended. Fill the Filo shells with approximately 1 kitchen teaspoon of the mushroom mixture and arrange on a platter or tray.

Sparkling Apple Cider

ngredients:
  2-3 Oz Apple Cider ~  2-3 Oz Champagne, Prosecco or Ginger Ale Flute Glasses  

Preparation Instructions:  In a fluted glass combine equal parts apple cider and sparkling beverage.   Serve with an apple slice or cinnamon stick.  If you’re looking to add a bit more sweetness and special presentation, rub the rim of the flute with apple cider and dip in brown sugar before filling.


Pair with your favorite bottle of red wine to complete the meal.
