Savory Mushroom Cups
Ingredients: 1 Lb Mushrooms Chopped ~ 6 TBS Butter ~ ¼ Cup Minced Shallots ~ ¼ Cup Grated Parmesan Cheese 8 Oz Whipped Cream Cheese ~ 30 Prepared Filo Shells (defrosted) ~ Salt and Pepper
Preparation Instructions: Heat pan to medium and melt butter. Add minced shallots and allow them to sweat for about 3 minutes. Then add mushrooms and let reduce for approximately 15-20 minutes or until thickened. Season with salt and pepper. While the mushrooms are reducing, whip with a hand mixer the cream cheese. Combine whipped cream cheese and grated parmesan cheese into the mixture. Stir until cream cheese is melted and all ingredients are well blended. Fill the Filo shells with approximately 1 kitchen teaspoon of the mushroom mixture and arrange on a platter or tray.
